Pumpkin Bread

Ingredients

  • 1/2 cup Dark Brown Sugar
  • 1/2 cup Vegetable Oil
  • 3/4 cup Pumpkin Puree
  • 2 Eggs
  • 1 cup All-purpose Flour
  • 1 1/2 cups Whole Wheat Flour
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/2 cup Walnut chopped

Instructions

  1. In a large bowl, beat together the sugar, oil, pumpkin and eggs.
  2. In a medium bowl, stir together the all-purpose and whole wheat flours, baking powder, baking soda, cinnamon. Fold this into the pumpkin mixture, stirring the two mixtures just to moisten the dry ingredients. Stir in the walnuts. Pour batter into a greased 9x5x3 inch loaf pan.
  3. Bake the bread in a preheated 350ยบ oven for about 1 hour or until a pick inserted in the center of the bread comes out clean (check after 50 minutes if using mini load pans) Set the pan on a rack for 10 minutes, then turn out the loaf to cool completely.
