Maple-Balsamic Dressing

Ingredients

  • 1/2 cup tomato juice
  • 1/3 cup balsamic vinegar
  • 1/4 cup maple syrup
  • 1 Tbs minced fresh rosemary
  • 2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 2 garlic cloves minced
  • 2 1/2 Tbs extravirgin olive oil

Instructions

  1. Combine all ingredients except oil, stirring well. Gradually add oil, stirring constantly with a whisk until well combined.
  2. Note: Refrigerate dressing in an airtight container for up to five days; stir well before using.
