Grilled Chicken With Walnut Sauce
- 4 Chicken Breasts ((boneless skinless), about 6 ounces each)
- 1 Tbs Butter
- 1 small onion (minced)
- 1/2 tsp Garlic (minced)
- 1/2 cup Chicken broth
- 1 1/2 tsp Parsley (chopped)
- 1/4 tsp Basil (dry)
- 1/8 tsp Coriander (dry)
- 1/2 cup Walnuts
- Salt and pepper to taste
- Place the walnuts in a food processor and run until ground. Set aside.
- Melt the butter in a medium saucepan. Add the onion and garlic.
- Cook until soft (Do Not Brown). Add the broth, herbs, and walnuts. Bring to a boil.
- Reduce the heat and simmer until slightly thickened.
- Grill the chicken while the sauce reduces.
- Serve the chicken with the warm sauce ladled on top.
